Yorkshire Puddings.
4 large or 8 small.
Ingredients.
80g plain flour
small pinch salt
2 eggs
150ml milk
10ml olive oil
Additional vegetable oil for cooking.
Method.
Make the batter before preparing the meal to give it at least 30 minutes to rest.
Combine the wet ingredients, and salt, and whisk together thoroughly. Do this in a jug for ease of pouring later
Add the flour and whisk until smooth, without lumps. Don't worry about over mixing, just don't go mad.
The consistency should be like double cream.
When the meal is cooked and resting, make sure the oven is at 200C.Â
Take a clean Yorkshire pudding tray and add just enough oil to each cavity to coat the bottom. Put in the oven and preheat until smoking, about 5 minutes.
Pour in the batter, filling each cavity until just about full. BE CAREFUL to avoid pouring batter between the cavities as this will stifle the rise.
Replace in the oven and allow to cook undisturbed for 10 minutes. They should have risen and be starting to brown. At this point check, then cook until your preferred doneness. For us, usually another 5 minutes.
